The story of Chateau des Charmes begins over five generations ago with a family that traces its roots to the Alsace region of France and the vineyards of French Algeria. In these foreign lands, the ancestors of Paul Bosc began a heritage of fine winemaking that would serve the Bosc family for generations to come. This tradition of excellence continues today in the vineyards of Niagara-on-the-Lake where Paul Bosc and his family carry on this rich heritage of meticulous vinification by harmonizing science and art.

PAUL BOSC’S WINEMAKER’S NOTES
Riesling is a versatile grape variety. It can be made in many different styles from dry to semi-dry, sweet and even sparkling. We also believe that Riesling grown in cool climate wine regions, like Niagara, produce the best food-friendly. Our Riesling is an excellent example of this. It has wonderful aromas of lemon and lime with a hint of delicate flowers. We made this wine in the dry style with a thread of tangy acidity.

Riesling was one of the first varieties we planted in 1978 and that original block is still producing very good fruit. Since then the demand for Riesling wines, produced in the various styles, has increased and so too have our plantings. Riesling vines can be quite generous so we have to manage the yield of each vine quite carefully. This starts in the early spring when we prune and continues until late summer when we do the “green harvest”. Since we have practiced sustainable agriculture right from the beginning, these pruned bunches are tilled under the soil to replenish nutrients.

MICHÈLE BOSC’S FOOD PAIRING
Riesling can just as versatile in the kitchen as it is in the cellar, particularly when made in a drier style like this one. It can be a good foil for spicy dishes like Thai curries but I also like it with a simple veal scaloppini topped with a dash of fresh lemon juice. The crisp acidity also makes it a good match for a light salad with your favourite vinaigrette.
